Spinach Stuffed Shells

Spinach Stuffed Shells is one of my kids' favorite dishes.  I'm such a bad cook, but even this I can't mess up!  Every year it is our tradition to let the kids decide what we do for Christmas Eve.  This year they are torn between staying home and having stuffed shells for dinner or going to BJ's to get the ever popular pazookie for dessert!

Spinach Stuffed Shells

1 cup ricotta cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 egg slightly beaten
1 – 10oz package frozen chopped spinach, cooked and well drained
½ tsp dried oregano leaves
¼ tsp salt
12 – 18 jumbo shells, cooked al dente, drained, cooled
1 – 15 ½ oz jar speghetti sauce (my favorite is Prego Parmesan-Romano)

Mix well first 7 ingredients.  Stuff about 3 tablespoons into each shell.  In 12x8 baking dish, spread ½ of spaghetti sauce.  Spoon remaining sauce over shells.  Cover with foil and bake at 350 for 35 minutes or until hot.

The following nutrition information was obtained using the Recipe Calculator at SparkPeople.com and is based on using 15 shells for the recipe.
